The core of modern Switzerland can be traced back to the 13th century when three Alpine regions, Uri, Schwyz, and Unterwalden, formed an alliance known as the “Old Swiss Confederacy.” This alliance, celebrated in the legendary Oath of the Rütli in 1291, marked the beginning of the Swiss Confederation. Over the following centuries, other regions joined the Confederation, and Switzerland became a bulwark of autonomy against surrounding European powers. During the Renaissance period, Switzerland saw significant cultural development, and its cities became centers of trade and culture. In 1798, Napoleon Bonaparte’s forces invaded Switzerland, leading to significant political transformations. In 1803, the Helvetic Republic was founded, ushering in the modern era of Switzerland. This new state granted greater autonomy to the cantons, a structure that remains in place today. During the 19th and 20th centuries, Switzerland became famous for its policy of neutrality, avoiding international conflicts and serving as a mediator in numerous disputes. This neutrality has made Switzerland an ideal base for international organizations, such as the United Nations headquarters in Geneva.

👩🏻‍🍳Ingredients for 2 people👇🏻

  • 250g of tagliatelle or similar pasta
  • 150g of grated Gruyère cheese
  • 150g of grated Emmental cheese
  • 2 cloves of minced garlic
  • 200ml of dry white wine
  • 1 cup of chicken broth
  • 1 teaspoon of cornstarch
  • A pinch of nutmeg
  • Salt and pepper to taste Butter as needed

Preparation:

In a pot, cook the pasta according to the package instructions until al dente. Drain the pasta and set it aside. In a large skillet, melt some butter over medium heat. Add the minced garlic and sauté until golden brown. Add the white wine and let it cook for about 2-3 minutes until the alcohol evaporates and the wine reduces slightly. Add the cornstarch to the chicken broth and mix well. Pour the broth into the skillet with the wine and garlic. Stir until the sauce starts to thicken. Add the grated Gruyère and Emmental cheeses to the sauce and stir continuously until the cheeses are completely melted, and the sauce is creamy. Add the nutmeg, salt, and pepper to taste. Make sure the sauce is well seasoned. Pour the pasta into the skillet with the cheese sauce and mix well so that the pasta is fully coated with the delicious sauce. Serve the Pasta all’Alpigiano hot, garnished perhaps with some extra grated cheese and a sprinkle of fresh black pepper.
